I had Lexie visiting this morning, and I wanted something simple for my lunch. I had difficulty trying to decide what to have and evetually settled on potato scones. I made them with Lexie's invaluable help, (another reason why I decided to keep it simple!) and found them very filling, I had also used two cheese slices with the mixture and it really made them something special.

Total = 34p.
Once again the begining of the week, and I worry about making the food last for seven days. I decided to have spaghetti, since I didn't fancy a tomato based sauce, or a curry sauce I decided to experiment. As I didn't have any oil to cook the garlic and courgettes, I used a little stock, then tossed the cooked spaghetti and cheese slices into the mixture and heated it through with some herbs and a smidgin of chilli powder and let the cheese melt. It looked very creamy and actually tasted like Spaghetti in a cheese sauce, definitely a recipe I shall have to remember to write down- very moreish. I also remembered feeling hungry after my last pasta meal, so I increased the amount of spaghetti to 75g.

I am very proud of myself today, after starting the day feeling all at sea, walking around Lidl like a zombie not sure what to buy, then picking up random items and bringing them home, and finally wondering why the hell I had bought them and what I could make with them. In the end I still managed to eat well.
