Week 3, Day 1

A New Dawn

Shopping

I have found it very hard to decide what to buy with my  £ 7.04. So far I have spent £2.70 plus 95 p. on vegetables

My shopping for this week
The usual early morning cup of tea

Breakfast

porridge and tea

Porridge
Cup of tea
Total = 9p.

Lunch

cheesey potato scones with tea
Potato scones with cheese
A cup of tea

Potato scones + cheese = 26p
Total = 26p.

I had Lexie visiting this morning, and I wanted something simple for my lunch. I had difficulty trying to decide what to have and evetually settled on potato scones. I made them with Lexie's invaluable help, (another reason why I decided to keep it simple!) and found them very filling, I had also used two cheese slices with the mixture and it really made them something special.

Dinner

Spaghetti and a cup of tea.

Spaghetti with courgettes and cheese
Cup of tea

Spaghetti = 6p
courgette = 10p
cheese = 13p.
garlic and herbs = approx. 3.
1/2 stock cube = 2
Total = 34p.
Once again the begining of the week, and I worry  about making the food last for seven days. I decided to have spaghetti, since I didn't fancy a tomato based sauce, or a curry sauce I decided to experiment. As I didn't have any oil to cook the garlic and courgettes, I used  a little stock, then tossed the cooked spaghetti and cheese slices into the mixture and heated it through with some herbs and a smidgin of chilli powder and let the cheese melt. It looked very creamy and actually tasted like Spaghetti in a cheese sauce, definitely a recipe I shall have to remember to write down- very moreish. I also remembered feeling hungry after my last pasta meal, so I increased the amount of spaghetti to 75g.

Tea and milk
Total = 5p

Todays Total Expenditure = 74p

I am very proud of myself today, after starting the day feeling all at sea, walking around Lidl like a zombie not sure what to buy, then picking up random items and bringing them home, and finally wondering why  the hell I had bought them and what I could make with them. In the end I still managed to eat well.

Since I had reached the stage where the only thing I had left for a main course was split yellow peas, I used them to make a curry. I used a 1/4 jar of sauce which made it very sloppy as you will see in the picture, however this didn't detract from the taste and it was yummy.

 End of the week

At the end of the week this is what I have left to carry over 1/2 an onion and a  1/4 stick of celery + 4p.

Today I took Lexie out, and it was very hot, and I would have loved to have been able to cool down with a Magnum.. What made it worse was that while I was queuing to buy Lexie an ice cream there was a woman in front of us who bought about twenty ice creams for all the people in her group. I really felt hard done by, so today I have treated myself to my own brand of comfort food.

I have been a bit late putting this up, as we have had Lexie staying, it was hard last night we made cakes (Lexies idea) and I couldn't have any. I used most of my veg. up in a bake, I was going to make kebabs, then thought buying wooden skewers would be an awful waste of money on the breadline, so I turned it into roast veg. I was absolutely shattered by the end of the day , but that was more to do with a grand daughter than my diet.

The photo is deceptive, there seems to be only a tiny amount of soup but there was quite a lot, and I have put some in the fridge tomorrow.

1/2 carrot = approx. 6p.
Potato =  approx. 5p.
Pasta sauce = 12p.
Celery = 10p.
1/2 stock cube = 2p.
Spaghetti = approx. 2p
 = 37/2 = 19p
Garlic bread = 8p
Total = 27p.
Since the breads that I made previously, today I cut down the flour by an ounce, so the breads were thinner and smaller.

Tomatoes .
Garlic bread
Cup of tea
Sardines = 40p.
Potatoes = 15p.
Tomatoes = 8p.

Tea and milk = 5p
Total = 5p.

Total daily expenditure = 1.12p

Today I was 12p. over my daily budget, as soon as you start to introduce meat or fish into the diet, the price shoots up making it very difficult to have a truly healthy diet on £1 a day.

Week 2 Day 3

Getting Fed Up

This morning I woke up at 5.30, but I can't say I was aware of being hungry, so it might just have been the light mornings. I had my usual cup of tea then, and lay in bed reading

porridge and a cup of tea

Breakfast

Porridge
Tea
This morning I really fancied some buttered toast, but since I had neither bread nor any form of spread that was a definite no, no. I couldn't finish my porridge, so I might need to adjust the amount of porridge to a smaller amount. I am finding portions size hard to gauge as my appetite seemed to vary from day to day.

Porridge = 8p.
Sugar = 1p.
Total = 9p.

1/2 pizza
Tea
For lunch I had what remained of last night's pizza.

Total pizza = 30p.

chick pea tagine and a cup of tea

For dinner I have had a chick pea tagine, I have used up all my supply of chick peas, and finished what was left of last weeks tomatoes. Although I couldn't manage to afford all the ingredients for an authentic tagine, I was still able to make a fairly authentic tasting tagine, with what I had to hand. I missed having my cous cous with it, but luckily enough I like rice, so it wasn't too bad.

Chick peas = 10p.
Tomatoes = 8p.
Spices = approx. 10p.
Onion = approx 5p.
1/2 stock cube = 2p.
Rice = 6p.
Total = 41p.
Tea = 5p.

Total = 5p.

Total expenditure 85p.

I am glad I committed myself to this on Facebook, otherwise I think I might have given up today. It is hard trying to figure out what to cook with fast depleting supplies, then coming up with an idea and start getting the ingredients ready, and suddenly realise that if you make this or that you will not make the seven days. So, today I felt quite low, but that might have been nothing to do with my food, but just one of my moods.

Week 2 Day 2

Hunger Pangs

I woke up at 5.30 this morning feeling very hungry, I realise I didn't have enough to eat last night, and will have to remember to make more pasta next time. I drank my cup of tea in bed, but was determined not to give into my hunger pangs. For a while I did actually have cramps in my stomach, but eventually it all faded, and I was able to wait and have breakfast at the normal time.

Breakfast

bowl of porridge and cup of tea
Breakfast was the usual porridge and tea.

Porridge = 8p.
Sugar = 1p.
Total 9p.

Lunch

Hummus
Garlic bread
Tea
For lunch I had hummus and a garlic bread, unfortunately the photo hasn't turned out. The yogurt worked a treat, but I decided to put a little salt on the top of the bread and over did the salt, so the bread was a bit salty. Eric shared my lunch, so I shall total up and add his share into my food allowance, so I shall have a little extra, call it enterprise.

chick peas = 10p.
yogurt = 11p approx.
spices = 6p. approx
total = 27p
Total 1 portion = approx.14p
Flour = 14p
Yogurt = 10p
total 24p
Total 1 portion = 12p.
Total = 26p.

Dinner

Vegetable pizza and a cup of tea
Vegetable pizza
Cup of tea
This morning I made three portions of the bread mixture and used the last portion as a pizza base. Thanks to Eric I had some extra money to spend, and I spent £1.02 on fresh veg, so I now have 24p. remaining. The bread proved to be a lot more substantial than the nasty cheap bread from last week, and I could only eat half a pizza, so I shall have the rest for lunch tomorrow.

Pizza base =12p.
Pasta sauce = 12p.
Courgette = approx 6p.
Pepper = 14p
Mushrooms approx. 5p.
Cheese = 11p.
Total = 60p./2 = 30p.

Total = 30p.

Tea and milk = 5p.
Total = 5p.

Total expenditure today =70p.

Today I think I have had my 5 a day, I presume I have had the carbs. my body needs because  I have been to the gym and been for an evening walk in the park, and I still could only eat half my dinner, and my energy levels are still high.
